Laurus nobilis, the Bay Laurel, is one of the most enduringly popular evergreen shrubs in cultivation — a plant of genuine dual purpose, equally at home in the kitchen as it is at the heart of a formal garden scheme. With its richly aromatic, glossy dark green foliage and naturally upright, dense habit, Bay is a cornerstone plant that earns its place in gardens of every style and scale.

Habit & Appearance

Foliage: The lance-shaped leaves are a deep, lustrous green with a leathery texture and a distinctive herbal fragrance that intensifies when bruised or crushed. The plant maintains a full, dense canopy year-round, making it one of the most reliable sources of evergreen structure in the garden.

Flowers & Fruit: In spring, Bay produces clusters of small, pale greenish-yellow flowers that are modest but charming. Female plants may follow these with small, oval berries that ripen to a deep blackish-purple in autumn — an added seasonal detail that brings quiet interest to the plant.

Growth Habit: Naturally forming a broad, upright shrub or small tree, Bay is also exceptionally amenable to training and clipping, lending itself beautifully to standards, pyramids, spirals, lollipops, and informal hedging. Left unpruned, it develops into a handsome multi-stemmed specimen of considerable presence.

Growing Conditions

Position: Bay thrives in full sun and will also perform well in partial shade, though foliage tends to be most vibrant and fragrant in a sunnier aspect. It appreciates a sheltered position, particularly in colder or more exposed gardens, where harsh winds can scorch the leaves.

Soil: Plant in fertile, well-drained soil. Bay dislikes sitting in waterlogged conditions, which can lead to root problems, so good drainage is essential whether growing in the ground or in a container. In pots, use a quality loam-based compost and ensure the container has adequate drainage holes.

Hardiness: Laurus nobilis is hardy across most of the UK once established, though young plants and container-grown specimens can be vulnerable to prolonged hard frosts. In colder regions or exposed sites, providing some winter protection — such as fleece wrapping or moving containers under cover — will keep the plant looking its best.

Care & Pruning

Watering: Established plants in the ground are reasonably drought-tolerant once settled in, but container specimens require consistent watering during the growing season. Reduce watering in winter, but do not allow the rootball to dry out completely.

Feeding: Apply a balanced, slow-release fertiliser in spring to support healthy growth. Container-grown plants benefit from additional liquid feeding through summer, as nutrients are depleted more quickly in pots.

Pruning & Shaping: The best time to clip Bay into a formal shape is late spring to early summer, once the risk of frost has passed. A second light trim in late summer will keep topiary forms crisp through autumn and winter. For informal specimens or hedges, prune as needed to maintain the desired size and density. Always use sharp secateurs rather than shears where possible to avoid bruising the larger leaves.

Harvesting: Leaves can be picked fresh at any time of year for culinary use. For drying, harvest stems in summer when the essential oil content is at its peak. Fresh leaves have a more subtle flavour than dried, and both are invaluable in the kitchen.

Perfect Planting Combinations

Mediterranean schemes: Bay is a natural companion to Lavandula, Rosmarinus, Cistus, and Salvia, sharing their preference for sun and free-draining soil while contributing bold evergreen structure that these lower-growing plants lack.

Formal and structured gardens: Pair with Buxus sempervirens, Taxus baccata, or clipped Ilex for a classic parterre or formal border framework. The contrasting textures of Bay's broader leaves against the fine foliage of box or yew creates a satisfying visual rhythm.

Container displays: Bay standards or topiary forms make striking focal points when flanked by seasonal planting — try trailing Helichrysum, compact Heuchera, or fragrant Thymus at the base for a layered, year-round display.
